Hello Everyone - Happy Weekend to you all!
This weekend we have:
Carrots, rainbow carrots, red and golden beetroot, Swedes, leeks, white and red spring onions, curly and Tuscan kale, Swiss chard, curly and flat parsley, mint, basil, chives, salads, cherry tomatoes, cucumbers, green peppers, aubergines, garlic, potatoes, butternut, gem squash, white and red onions, apples, bananas, mangoes and blueberries
CHIMICHURRI:
Ingredients:
3/4 cup olive oil
1/4 cup red wine vinegar
Juice of 1/2 lemon
4 x garlic cloves, chopped
1/2 x red onion, finely chopped
1 x red pepper, finely chopped (optional)
1 x large cup parsley, finely chopped
1 x large cup chopped coriander, finely chopped
1 x green or red chili, deseeded and finely chopped
Pinch of good salt
Method:
1. If you like a more rustic chimichurri then mix ingredients together, if not blend in a food processor
2. Delicious with meat, fish, nachos, mushrooms or burgers
3. If you add some mint it could go well with grilled aubergine
